last day at Luna's. bittersweet. had some fun times-- and it was nice to be back in the rowdy environment of a kitchen. a nice break from retail but reminded me how it's back breaking work and i probably am too old for it! it was nice to be re-inspired by food again after a few years of terrible food court meals at the mall. for my last day i ordered the Spinach Parmesan Temptation. out home-made Brazilian Nut "Parmesan" Dressing, accompanied by a
marinated Carrot and Beet Salad!

recipe: Vegetarian Soy Philly Cheesesteaks
one of my favorite easy go-to dinners when i'm feeling lazy and tired after a long day: SANDWICHES!
this "healthy" philly cheesesteak is made with Trader Joe's vegetarian soy beef strips, yellow and green bell peppers, and grilled onions. saute and add seasonings (salt and pepper, crushed red pepper, garlic powsder, etc) and top on a toasted hoagie roll with some melted cheese (i uses low-fat mozzarella--provolone is better!)

recipe: healthy meatball sub
probably my favorite decadent treat from a sub shop... tender meatballs and loads of cheese on a soft roll. hmm, how to make it healthier? these textured vegetable protein meatballs by "Veggie Patch" were on sale this week so i picked them up to make sandwiches with my leftover bread. i added tons of veggies to mine and a very small amount of marinara (hello calories!).
