tonight i made a "healthier" version of a tuna noodle casserole. i know tuna noodle casserole isn't healthy, but we had leftover tuna salad to use up unfortunately. turned out super yummy. i tried to cram it with as many veggies as i could.
toss together a few cups of cooked whole-wheat elbow macaroni with a big scoop of miracle whip, salt, pepper, and dill seasoning. add veggies! i added celery, shredded carrots, chopped red bell pepper, corn, and leftover kale chips. mix in 1/2 a cup of cheddar cheese and press into a casserole dish. top with a layer of cheddar cheese and bake at 350 for 40 minutes.
